Domaine Christian Moreau Pere & Fils

Terroir: Domaine Christian Moreau Pere et Fils owns a total of just under 10 acres of the famous Vaillon vineyard. With a relatively steep grade the plot has terrific drainage of it's Kimmeridgien clay soil and a south/southeast exposure that provides optimum sunlight throughout the growing season.

Vinification: The winemaking techniques strive to honor the high quality of the terroir, vines and grapes, bringing out the very best in every harvest. A small percentage of the final blend does see a short time in oak barrels.

    The Moreau 2011 Chablis Vaillons is distinctively-scented with lemon and lime, wintergreen and nettle, with lime zest and juniper berry, salt, iodine and oyster liqueur offering enhanced stimulation on an expansive palate and in a long-lined, bell-clear finish. This is less fruity not just than the corresponding generic but also than most wines of its vintage, but by the same token unusually incisive, invigorating, and mouthwateringly marked by mineral flavors.

    Bright floral notes meld into white peach and pear notes in the 2011 Chablis Vaillon. Ash, smoke and slate appear later, adding depth and complexity. There is a lovely freshness and tension in the Vaillon that needs further time to soften a touch. All the elements are very nicely balanced in this focused, mid-weight Chablis.

    35% of this wine was vinified in oak, including less than 5% new barrels. Pale yellow. Subtle aromas of yellow peach and ginger. Broad and spicy in the mouth, offering a lovely balance of sweetness and acidity. Firm-edged, spicy finish.

    "A perfumed nose offers an attractive mix of pear, floral notes and moderate amounts of Chablis character before merging seamlessly into supple and round flavors that retain a fine sense of underlying tension before culminating a dry, clean and linear finish where nuances of tidal pool surface. This is pretty rather than deep but the material is here to allow the flavors to add depth."
