Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir.
Terroir: Grand Cru Chambertin Clos de Beze sits mid hillside sharing borders with Chambertin to the south, Mazis-Chambertin to the north and Chapelle Chambertin just downhill. Domaine Faiveley's parcel represents 3.2 acres of the overall 37 acre vineyard. The vineyard has an eastern exposure and soil rich in limestone.
Vinification: Grapes are hand harvested and sorted upon arrival at the domaine. Following a short maceration the must undergoes primary fermentation in a combination of stainless steel and wooden vats. The young wines are aged in 70% lightly toasted new oak barrels for 16 to 18 months.
A beautiful ruby color. This wine has pleasant, fresh, red-fruit aromas on the nose, which we find again on the palate. It has rich and very ripe substance, with fine round tannins. It’s a very well-structured and pleasing wine.
A dense and rich grand cru that shows plenty of fruit and spice character not to mention delicious minerality. Full and lively with ripe tannins and a fresh finish. Dense and agile.
Discreet but not invisible wood serves as a backdrop for the airy, ripe and very pure red and dark cherry, earth and wonderfully broad-ranging spice notes. There is terrific punch to the big, robust, tautly structured and well-muscled flavors that ooze with minerality and buckets of mid-palate sap that buffers the prominent tannic spine on the youthfully austere finish. This massively long effort should age glacially but gracefully for several decades.
(25% vendange entier): Bright, dark red. Knockout aromas of raspberry, flowers and smoky minerality. Super concentrated and salty but tighter-grained and less showy today than the Mazis-Chambertin, with its sexy smoke and soil notes energized by terrific mineral verve. Here the tannins stand out and will need considerable bottle aging to be absorbed. This superb vin de terroir is most impressive today on the very long finish, which leaves behind a perfume of dried flowers.
