Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for centuries within their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir.
Terroir: Clos Rochette is a 11 acre monopole of Domaine Faiveley located in the heart of the Mercurey appellation. This is an extremely rocky vineyard with soils of clay, limestone and gravel. Vines date back to 1960.
Vinification: Grapes are hand harvested, sorted and pressed on site in Mercurey. Following vinification the young wines are brought to the domaine cellars in Nuits-St-Georges for aging. To preserve freshness only a small portion of the wine is aged in oak, with the majority staying in stainless steel for the 10-12 month aging period.

Ripe, open and harmonious, this white shows peach, apple, lemon and subtle butterscotch flavors. Mouthwatering and tangy on the lingering finish. Drink now through 2021.
A pretty if pungent nose displays an assortment combining notes of straw, petrol, citrus and a hint of pear. There is both good energy and richness to the very generously proportioned middle weight flavors that possess a hint of salinity on the very forward finish. To drink young.

Very pretty and lively with stones and minerals. Dried apples and lemon zest. Medium to full body, beautiful density and intense flavors. Hints of lime on the finish. Some salt to boot. A monopole white from Cte de Chalonnaise. Drink now.
Aromas of apple, lime, spearmint and menthol. Juicy, suave and cool, with a hint of greenness contributing to the wine's light touch. A wine of moderate phenolic maturity but there's solid dry extract here and good finishing lift. Flous told me that the musts smelled a bit green even when Faiveley began picking on September 2 and that he doesn't understand how others were able to harvest ripe fruit in late August. There are 25,000 bottles of this juice, from five hectares of vines, and 20% of it is aging in stainless steel.
