Terroir: Situated 125 miles south of Paris, the Sancerre landscape undulates at an altitude between 650 and 1,300 feet. The Loire River on the Eastern side of the hilly environment creates a relatively temperate microclimate for the wines. The Pascal Jolivet Sancerre Les Caillottes comes from an old vine 8.65 acre parcel at the top of the village of Bué-en-Sancerre. Soils are rich in limestone and exposure varies from south to southeast. Drainage is ideal leading to low yields.
Vinification: Pascal Jolivet practices a minimalist winemaking style, allowing nature to take it's course. Each of his white wines is produced using exclusively native yeasts, and entirely in temperature stainless steel. All parcels are vinified separately until final blending and bottling.

The 2015 Sancerre les Caillottes opens with a clear, deep and intense bouquet of lemon zest and grapefruit aromas. Full-bodied, dense and round on the palate, this is an elegant, pretty creamy, well-balanced Sancerre with power, a good structure and pineapple, as well as bitter grapefruit aromas in the aromatic aftertaste. This is a complex, almost rich Sancerre from Kimmeridgean limestone soils. Although you can drink it already today, the 2015 will gain complexity and transparency over the next several years.
A blend from different parcels but designed to express the calcareous soils that constitute 40% of the Sancerre vineyard.I tasted this after the 2014 single-vineyard bottlings, and it seemed a little muted on the nose by contrast. There is some friendly, slightly formulaic, ripe fruit on the palate. Not very subtle and still with some chewiness. Pretty intense on the palate.
