Very pale straw. Nervy, sharply delineated citrus fruit and quinine aromas, along with subtle herb and floral notes in the background. Taut, nervy and refreshingly bitter, offering lime zest and green apple flavors and a gentle anise flourish. Closes long and tangy, leaving a sexy honeysuckle note behind.

The decision to cool ferment the wine in tank (with a specific yeast) has been handsomely repaid with the purity and intensity of the varietal character; kiwi fruit, lychee, passionfruit, white peach and citrus are all on parade; the crisp natural acidity is sufficient to provide structure and length but doesn't distract.
