D'Antan is produced only in the finest vintages from the same source as the La Scolca Black Label and demonstrates the longevity of this world class Gavi.
Terroir: Sourced from the high slopes of Rovereto Superiore of Gavi. Yields are very low at about 2.25 tons per acre.
Vinification: Hand-harvested fruit is brought to the winery after 5-10 minutes, where it is sprayed with dry-ice. Cryo-maceration, cold fermentation (13-14⁰C) in stainless steel tanks and the use of natural yeasts preserves the Cortese’s subtle fruit, flinty acidity and structure. Upon selection, this wine will age for a total of 10 years in stainless steel tank prior to bottling and release.
Light straw in color with delicate greenish hints. An intense nose, long, continuous, lasting with fruit and floral scents. Powerful on the palate with flavors of mineral and roasted nut.

La Scolca makes this wine only in the best vintages, aging it up to ten years in bottle before release. Its weighty flavors of caramel and white truffle wrap around a core of lemony acidity, offering a contrast of softness and sharpness. One taster compared its savory and earthy notes to an aged white Rioja. It's a conversation starter to pour with roast pheasant.
