Casa Vinicola Luigi Calissano e Figli was founded in Alba in 1872. The winery, not only produced the classic wines of the Langhe Area and sparkling wines in the traditional way but also vermouth, the aromatized wine that was never absent from Piedmontese tables at the time.
Production Process
The formation of the tincture begins after extracting the aromatic essences of the herbs and spices at the basis of the Calissano recipe using various alchemical techniques that range from maceration in alcohol to the distillation of essential oils. The tincture is then combined with the wine base, the sugar is added and, after being fortified a little, the product is left to age for a few months before bottling.
Tasting Notes
A brilliant red color; with the first sip it fully releases the traditional taste that derives from the typical bitter note of wormwood. The bitter taste is moderated by the citrus scents of the bitter orange and grapefruit, backed by a spicier base of thyme and bay leaf and rounded off by an elegant vanilla note. The fine structure provided by the base wines, Gavi and Nebbiolo, make this a unique Vermouth for attractiveness and persistence. Any cloudiness is the natural evolution of the raw materials employed in the artisanal preparation of the recipe.
Serving Suggestions
Excellent as an aperitif, both neat or with an ice cube and sliver of orange peel, or as a complement to classic international cocktails (Negroni, Manhattan); a lovely end to a meal or for savouring in a moment of relaxation.
