About
Fontana Candida’s flagship wine recalls the history, tradition and core values that have built up around Frascati. Its name is inspired by the noble de’Grifi family, owners of these lands from the 11th century, and now home to Frascati’s finest vineyards.
Terroir
The vineyards lie on volcanic hills at 200–400 metres in altitude.A typical feature of the terrain is the pozzolan, also known in Italian as “terrinella”, situated in the points furthest from the eruption mouths. Pozzolans are made up of volcanic ash that give rise to deep sandy soils, very permeable to water, rich in potassium, with some phosphorus, calcium, magnesium, iron and microelements, and poor in nitrogen.
Vinification
The grapes are immediately sent to the cellar, where they are fermented off the skins,
after soft crushing. The first-pressing must is cold settled and ferments at controlled
temperature with inoculated yeasts. Before bottling, the new wine softens out in
temperature controlled stainless steel vats with a nitrogen purge to protect against
oxidation.
