Terroir

Facing mostly south to east, and reaching up from 70 to 343 metres above sea level, our higher slopes are some of the coldest in the Cape, thanks to fewer sunlight hours and a constant breeze off the ocean, just 10 kilometres away .They create the ideal growing conditions for Muscat de Frontignan, used to make our natural sweet dessert wine, Vin de Constance. As the berries are able to ripen fully before raisining begins, they are able to produce raisined fruit with remarkable intensity of flavour as well as natural acidity.

Vinification

One of the most important aspects is to achieve balance, to do this we harvested the grapes in numerous batches over a 2 month period. Each batch has a precise purpose and is meticulously blended together on numerous occasions to achieve a perfect balance between sugar, alcohol and acidity. After an extended fermentation period, the wine was aged for 3 years in a combination of 50% new oak and acacia barrels, as well as large format foudres before further blending and bottling.

Tasting Notes

Wonderfully bright on both the nose and palate. Concentrated flavours of apricot and orange zest with aspects of frangipani flowers abound. Mouth filling yet clean and focussed, the wine tapers into a rich luscious finish.

Food Pairing

Perfect food pairings are Asian-style roast duck, ginger and orange-glazed salmon, desserts such as creme brulee, berry-based desserts.

A pale gold color, the 2015 Vin de Constance Natural Sweet Wine has strong, precise aromas of golden raisins and orange marmalade. The palate shows great balance between sweetness, alcohol and acid and is sweet but not as overly sweet as many other sticky wines. Wow, this is delicate with generous floral tones and is really delicious. The grapes were harvested in different tries to select fresher berries earlier at the beginning of the harvest in order to maintain acidity levels in the wine, while other berries were harvested later in the season to increase sweetness. This wine captures the essence of Vin de Constance and was aged in a combination of 50% new French oak, Hungarian oak and French Acacia barrels.
