About
Metis is a beautiful discovery of the New World style from the most legendary estate in South Africa. It is a joint project between South Africa’s renowned Klein Constantia and France’s legendary Pascal Jolivet, together they have created the beautiful Metis Sauvignon Blanc.
Terroir
The grapes were hand harvested from a selection of the higher vineyards. Blocks with a high acidity and low pH were selected to withstand the way in which the wine is made.
Vinification
The wine underwent a long, cool fermentation and was left to mature on its fine lees for 9 months in stainless steel tanks. There was no sulphur added at crush, no
settling and there was minimal winemaking interference
Tasting Notes
Light and vibrant in appearance. Fresh citrus and nettle aromas fill the nose. The palate is concentrated and full bodied with a rich peppery and mineral mouthfeel. Refreshing and supported by a balanced acidity, the wine concludes with a powerful and flinty finish.
Food Pairing
Perfect food pairings would be pastas, risottos, seafoods and ricotta-stuffed chicken.
