About
Composed mainly of five plots, our vineyard expanded in 2016 and now covers 30 hectares of limestone and flint. “Attitude” is the fruit of this reflection and the natural know-how of Maison Pascal Jolivet. Its identity and its particularity give a unique style to this wine signed Pascal Jolivet.
Terroir
A blend of grapes grown on limestone and clay mixed with flint on the vineyards in Chemery en Touraine
Vinification
The fruit is destemmed and a subtle maceration by pumping over occurs soon after harvest. This vinification favors the subtlety and elegance of Pinot Noir more than its concentration. The wine is aged in thermo-regulated stainless steel vats for 7 months without the use of any wood.
Tasting Notes
Floral, crunchy with aromas of fresh strawberry and raspberry. On the palate its freshness is further enhanced by a spicy, white pepper finish
