Cerasuolo d’Abruzzo is a traditional rosé wine made of 100% Montepulciano d’Abruzzo grapes. Owing its name to the Latin word for cherry “cerasus.”
Terroir
Abruzzo’s landscape predominantly comprises rolling hills and rugged mountains, with elevations ranging from sea level to over 9.5000 feet. The area of production, within the Province of Chieti, is characterized by clay and limestone soil. The region’s geological diversity ensures that each grape variety can match its optimal soil type, enhancing the grapes’ expression and complexity.
Vinification
Cerasuolo d’Abruzzo is made solely from Montepulciano grapes. Cerasuolo’s tradition stretches back several centuries, with ever-changing methods and different approaches: the white vinification (with short or absent contact with the skins during maceration), the bloodletting (“salasso”, where part of the must for red winemaking is vinified white), or “svacata”, where ripe red grapes are added to white-vinified must. Di Sipio utilizes the white vinification process with soft pressing and short contact with the skins, so that a vivid pink color is released. The resulting wine is then bottled and released.
