Di Sipio Pecorino Terre di Chieti IGT 2023

About
Pecorino grapes, not to be confused with the cheese by the same name, owe their name to the fact that flocks of sheep (“pecore”) found them to be their favorite treat, while pasturing. Pecorino is a grape varietal that found in Abruzzo its quintessential home. It’s a light-skinned wine grape used in Italy’s eastern coastal regions, particularly in Marche and Abruzzo. The grapes are typically rich in sugar, which translates into a reasonably high alcoholic content, in turn balanced off by its distinctively high acidity, which yields exceptionally fresh and crisp wines.
Terroir
Abruzzo’s landscape predominantly comprises rolling hills and rugged mountains, with elevations ranging from sea level to over 9.5000 feet. The area of production, within the Province of Chieti, is characterized by clay and limestone soil. The region’s geological diversity ensures that each grape variety can match its optimal soil type, enhancing the grapes’ expression and complexity.
Vinification
Grapes are gently crushed and the juice is left in contact with the skins for a short time. The free-run must is then extracted through soft pressing and fermented at a controlled temperature to extract the desired flavors and aromas from the grapes. The resulting wine is then aged for a minimum of 3 months in the bottle, prior to release.
