Unfortunately, there is no classification or scale of vintages in Sancerre. Domaine Pascal Jolivet was formed over the years following the purchase of plots of land that are among the most beautiful terroirs in Sancerre. The very particular character of this plot reinforces the unique style of the Domaine’s wines.
Terroir
Located in the village of Bué, we own 1.83 hectares out of the 26 hectares of this iconic single plot. Le Chêne Marchand lies on limestone soil and enjoyes a southern exposure. The average age of the vines we farm is around 40 years old.
Vinification
The grapes are harvested manually and sorted upon receipt at the winery, where we work by gravity in order to be as respectful as possible of the natural cycle of vinification. We lightly press the grapes and only keep the first part of the juice – the purest, most precise and full of flavour. The must are vinified using natural yeast, 50% in wooden casks and 50% in temperature-controlled stainless steel vats. They are aged for 9 months on fine lees, filtered and then bottled.
