Terroir

Maule Valley, 170 m above sea level. The climate is temperate with a six-month dry
season and an annual rainfall of 700 mm. Sandy-clay loam soil with a presence of
granite throughout the prole. High temperatures during the ripening period are
modied by cool breezes from the Pacic Ocean. Cauquenes is located in the Maule
Valley (36º 08’41’’S), 175 m above sea level, and the high temperatures are modied
by cool breezes from the Pacic Ocean. The soil is deep red clay loam.

Vinification

The grapes were harvested by hand using 800 kg bins and were not crushed as soon as they were brought to the winery. The bunches were only destemmed. The grains completes had a total maceration of 35 days. The temperature is controlled between 26°C and 28°C. There was a spontaneous malolactic fermentation in barrels.

Tasting Notes

Intense ruby-red color with violet highlights. In nose, this wine displays a never-ending array of aromas recalling cherries, black fruits, and mushrooms, along with additional notes of apricots, white peaches, pears, and a hint of lychee. The ripe and elegant palate is juicy and round, with vanilla notes, ripe tannins, and a long finish.

Food Pairing

Red meats. Barbeque, braised Lamb Shank with mint sauce and rustic potatoes, pulled pork sandwich with BBQ sauce.
