About

The history of Marsala wine coincides with that of the Pellegrino family. Since 1880, today as it was in the past, Pellegrino maintains alive the Marsala tradition on the western strip of the island. This area’s low rainfall, hot temperatures and dry winds make treatments unnecessary. Over the last 135 years Pellegrino have acquired a deep knowledge of the territory, of the methods of cultivation of native vines and of the best techniques of vinification of the grapes.

The Pellegrino family has always personally overseen the activities in the vineyard and in the winery, and the family is still today, having reached the seventh generation, involved daily in the management of the winery.

Terroir

Marsala wine is produced in the region surrounding the city of Marsala in Sicily, Italy, constantly exposed to warm, southerly breezes, rich in clay (“terra rossa”) and minerals. This fortified wine is made from indigenous grapes such as Grillo and Catarratto , which are grown in the sun-kissed westernmost part of Sicily.

Production Process

Harvesting time during the second ten days of September, at advanced maturation. Vinication at 20°-22°C. The fermentation is halted with the addition of neutral alcohol. Then cooked must is added. Aging in oak barrels for 12 months.

Tasting Notes

Rich, nutty flavor with hints of brown sugar, vanilla, and dried fruits. Marsala wine is not only a delightful drink but also a versatile ingredient in cooking, adding depth and flavor to various dishes.

Serving Suggestions

Dry Marsala is a great aperitif with smoked meats, olives, nuts, and soft goat cheese. Also, it complements tangy blue cheeses like Gorgonzola and Stilton, and hard cheeses like Pecorino and Parmigiano-Reggiano. It pairs well with salty snacks like smoked fish and anchovy crostini. As a dessert wine, Dry Marsala's flavors of vanilla, citrus rind, and foraged nuts work their magic with warm apple pies served with vanilla ice cream. Finally, Dry Marsala is also commonly used in savory cooking, where it adds a nutty flavor and caramelization to dishes like beef tenderloin, mushrooms, turkey, and veal.
