In 1987 Pascal as a wine maker and merchant creates the «Pascal Jolivet» brand. To facilitate this development and produce his own range of wines, Pascal builds a brand new winery in 1990. Inspired by Champenois facilities that he knew so well, Jolivet’s wine-making cellar in Sancerre is equipped with temperature controlled stainless steel tanks; the facilities are state-of-the-art. In 1993, Pascal acquires from his cousins a beautiful vineyard of six hectares (15 acres), which is located in the greatest terroirs of Buéen-Sancerre: Le Chêne Marchand, Le Grand Chemarin and La Plante des Prés. And so it was that Domaine Pascal Jolivet was born!

In his logic of research and authenticity, Pascal started a partnership in 2016 with the Dauny family, pioneers of organic farming in Sancerre in 1966. Pascal is relying this time on 50 years of experience and entrusts Benoit Dauny responsibility for the management of the 145 hectares of the estate which will henceforth produce grapes from organic farming.

Pascal Jolivet

Over the years, Pascal has developed a real style for his wines, very identifiable by its purity and elegance. Pascal creates a “bio vinification”, after a very light settling, the fermentation of the juices is carried out with indigenous yeasts, the aging “on lees” plays a fundamental role in the concentration and complexity of our wines. The process is extremely natural and the very long fermentations allow to nourish, to stabilize the wines sustainably by using very reduced doses of sulfur.

The Winemaker

Valentina Buoso

Everything begun when Valentina was 16 years old at a wine seminar…the passion for wine was born! The magic of nature and all its aspects has always fascinated her. In 2007 she obtained her bachelor’s degree in Viticulture and Oenology at University of Padova (Conegliano section) in North East Italy with a thesis on the molecular characterization of wild yeast. In 2009 she executed her Post Graduation Specialization in Oenology at the University of Torino (Asti section) and a European Master’s degree at University of Montpellier and Bordeaux (Diplome National de Master Sciences et Technologies, mention Agronomie et Agroalimentaire, spécialité Viticulture, Oenologie, Economie et Gestion Viti-Vinicoles, at the SupAgro Montpellier). During her studies and for one year she worked as assistant first researcher at CRA ENO (Agricultural and Oenology research institute of Asti, Tourin). The project and the research work were about mannoprotein cession in Piedmont white wine like Arneis and Cortese. The work was presented and published at 2010 Macrowine congres. She also worked for a couple of years on an oenological laboratory in North East Italy. To amplify her knowledge she decided to leave Italy and work overseas. She moved to France where she worked in the cellar in Limoux at Domaine Astruc (Domaine Paul Mas) and in St. Emilion at Thienpont’s properties (Chateau Berliquet, Larcissse Ducasse, Chateau l’If). In 2010, she moved to the United States where she worked in California (Mendocino region) at Alder’s Spring vineyard and ranch and she also had the great pleasure to visit Oregon. She lived in New Zealand for a year in Hawke’s bay region where she had the chance to work at Elephant Hill. In 2012 she decided to discover the Australian’s winemaking philosophy working for LVMH in Margaret River at Cape Mentelle. In 2013 she worked in Chile (Colchagua valley) at Vina Los Aromos where she was impressed from their culture and way of working. In August 2013, she joined the Pascal Jolivet team as winemaker.
