The grapes are harvested manually and sorted upon receipt at the winery, where we work by gravity in order to be as respectful as possible of the natural cycle of vinification. We lightly press the grapes and only keep the first part of the juice – the purest, most precise and full of flavour....

Hand-harvested, the grapes are then carried in small boxes and sorted out upon arrival at the winery. Long fermentation during 20 days in wooden open vats, with punching down of the cap and temperature control. Ageing in oak barrels (30% new oak) and estate bottling after 16 months.

The grapes, which are only destemmed to leave them intact, are vinified in small truncated cone vats. Once the alcoholic fermentation has finished, maceration is prolonged for several more days on the skins to enhance the structure and roundness.
