Terroir

The Dorrien Cabernet Sauvignon is grown in the Dorrien vineyard at an altitude of 265m. The soil is brown sandy loam over clay and the average vine age is 30 years old.

Vinification

The vinification is 10% whole bunch and 90% destemmed; on skins three weeks /open fermenter with heading boards and remontage. It is aged for 18 months on both new and used French oak barriques, Remond and d’Aquitaine coopers, mix of forests.

Tasting Notes

The color is garnet red with bright purple hue. The aroma features notes of black currant, plum, pencil lead, cedar and spice. On the palate Cassis, mulberry, native red plum acidity, a savory cedar finish with firm and drying tannins.

Food Pairing

Pairs best with aged red meat cuts, marinated white meats like pork and poultry, and grilled mushrooms.
