Terroir

Folonari Moscato is selected from hillside vines cultivated in Oltrepò Pavese on over 800 hectares of vineyards. The vines are trained using the Guyot system and grow on white soils of calcareous-marly origin. The yield per hectare in about 8000 kilos.

Vinification

Grapes are harvested when they are slightly overripe, are subjected to soft pressing for vinification off the skins with cryomaceration. Fermentation takes place at a controlled temperature of 18-20°C; when the right alcoholic content has been reached fermentation is then stopped by sharply reducing the temperature to leave a high natural sugar residue.
