About

Produced only in excellent seasonal conditions, it is special not only because of the quality of Nebbiolo, the training and picking methods, but also because of the production process itself, which involves natural drying of the grapes for around three months before vinification.

Terroir

The vineyards are south-, south-east, and south-west facing lying at altitudes of between 900 and 1600 feet above the sea level. The type of soil features shallow, sandy loam with low fertility, contained by dry-stone wall terraces.

Vinification

Nino Negri limits harvest to only 25% of the total crop thus ensuring that only the highest quality fruit makes its way to the winery. Upon arrival the sorted bunches are placed into wooden crates where they will sit until the new year when they are naturally dry. The juice is macerated and fermented in stainless steel prior to aging over a period of 18-24 months in Allier oak. 33,000 bottles produced.

Tasting Notes

Sfursat 5 Stelle DOCG 2020 has an intense ruby colour. On the nose, it is an aromatic explosion reminiscent of Mediterranean flowers and spices with balsamic nuances and a background of ripe black plum. In the mouth the wine is extremely balanced with fruity and crispy. The finish is long and pleasantly savory.
