Unfortunately, there is no classification or scale of vintages in Sancerre. Domaine Pascal Jolivet was formed over the years following the purchase of plots of land that are among the most beautiful terroirs in Sancerre. The grapes from these plots are harvested manually and produce highly concentrated juices, enhanced by natural fermentation with indigenous yeasts. The aging on fine lees lasts approximately 6 months. The very particular character of this plot reinforces the unique style of the Domaine’s wines.

Terroir

Commune of Bué, the House has 1.39 hectares out of the 32 hectares of this plot selection. Limestone terroir, old vines.

Vinification

Manual harvest, 40-year-old vines, eastern slopes. Each grape is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of winemaking. We do a light press and keep only the free-run juices and heart of the press. Natural vinification in temperature-controlled stainless steel vats with aging on fine lees for 12 months.

Tasting Notes

Wine with a lot of complexity, dry, fruity, nice salinity.
