About

Based in Savigny-les-Beaune, this 47-hectare property is controlled and operated by Antonin’s son Dominique and his granddaughter Hombeline. Passionate, Dominique and Hombeline are always looking for better quality and terroir expression. Dominique created a model winery, producing wines of impeccable quality from 25+ different appellations, including some of the most renowned villages of the Côte d’Or.

Terroir

Chambolle-Musigny is a village located in the central part of the Côte de Nuits.  Its vineyards are facing East/South-East. The Domaine Guyon wine area for Chambolle Musigny Les Cras covers almost 1.13 hectare (2.79 acres).

Vinification

Hand-harvested, the grapes are then carried in small boxes and sorted out upon arrival at the winery. Long fermentation during 20 days in wooden open vats, with punching down of the cap and temperature control. Ageing in oak barrels (30% new oak) and estate bottling after 16 months.

Tasting Notes

Very nice ruby robe, with lovely aromas of violets and perfumed red cherries.  Elegant and delicate with a silky texture. Soft tannins for a very long finish. This wine can be kept for 10/15 years.

Food Pairing

To be served at 16-17°C with roasted pigeon, duck with truffles and most cheeses.
