The Domaine Christian Moreau Père et Fils is settled in the heart of Chablis since 2001, near by the Grands Crus, in very functional and modern facilities: an entirely air-conditioned 1500 m2 place gathering all the vineyard equipment, fermenting room, bottling, labeling and wine storage. The Domaine also has an old 17th century vault in the center of Chablis, «la Grange aux Dîmes”. The logo representing the Statue of Saint Martin can be seen in front of the church facing our “Grange”.

Terroir

Located on the right bank of Chablis with only 0.5 ha south exposure in the eastern part of les Clos. The soils are clay-limestone marls from Kimmeridgien (Upper Jurassic), very rocky with white and dense clays

Vinification

Manual harvesting and grape selection on a sorting table. Pneumatic press. Cold settling and fermentation with a temperature of around 20°C. Natural yeasts. 100% in barrels during 9 months (1 to 5 year-old barrels – no new oak) and 6 months blending in tanks before bottling. 100% of the malolactic fermentation. Natural tartaric stabilization after 12 to 16 months aging.

This cuvee has the finess of les Clos and shows more richness and spicy flavours

The 2022 Chablis Les Clos Clos des Hospices does not quite have the same level of complexity as the regular cuvée. Touches of yellow plum, white flower and sea spray. The palate is well balanced with fine acidity. Very harmonious and with just the right amount of spiciness toward the finish that leaves the mouth tingling. A hint of praline lingers on the aftertaste. What a classy offering.
