About

Each terroir has its own identity, our “bio-vinification” allows us to enhance their qualities and styles. Sancerre is made up of four terroirs (including three main ones), Calcaire (40% of the appellation), Argilo-Calcaire (40% of the appellation), Silex (15% of the appellation), and Les Griottes (5%, Bué and Crézancy).

Vinification

Manual harvest, whole bunch pressing. Light cold settling. 100% natural vinification in temperature-controlled stainless steel vats, aging for 9 months on fine lees which allows us to neither fining nor filter the wine before bottling.

This is a delicious, mature, grown-up Pouilly Fumé. Gold in color, this wine has a perfumed nose of dried orange zest, caramelized golden apple, vanilla and clove baking spice topped with cream fraiche and a dollop of ripe Asian pear. The wine is slightly creamy in texture, yet retains a vibrant streak of acidity that runs through to the lingering finish.
