Selection of plots from our estate, 100% limestone. “Les Caillottes” is the name given to the Kimmeridgian limestone.

Each terroir has its own identity, our “bio-vinification” allows us to enhance their qualities and styles. Sancerre is made up of four terroirs (including three main ones), Calcaire (40% of the appellation), Argilo-Calcaire (40% of the appellation), Silex (15% of the appellation), and Les Griottes (5%, Bué and Crézancy).

Vinification

The harvest is manual; South slopes. Each grape is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of winemaking. We do a light press and keep only the free-run juices and heart of the press. Natural vinification in temperature-controlled stainless steel vats and aging for 8 months on fine lees.

Shows impressive concentration and savory power, with notes of sweet hay and jasmine overlaying a rich well of herb oil, lime zest, parsley and bitter herbs. This turns supple and round on the palate, with a silky feel to its crunchy nectarine element. Ends on a fresh note, offering cooling wet stone minerality. Drink now through 2029.
