Each terroir nourishes the vines in its own way, it is then the winemaker’s turn to put into practice the art of his know-how. This wine is the fruit of a philosophy, an ethic but above all the expression of a great terroir.

Terroir

Clay-limestone and Kimmeridgian terroir, old vines. Village of Champtin and Crézancy in Sancerre. Southern slopes.

Vinification

Manual harvest, whole bunch pressing. Light cold settling. 100% natural vinification in temperature-controlled stainless steel vats, aging for 9 months on fine lees which allows us to neither fining nor filter the wine before bottling.

Tasting Notes

Very high complexity and minerality. Exceptional texture with persistent salinity.

Turbot, Sole meunière, matured Chavignol goat’s cheese.
