Serragrilli is a gentle hill in the municipality of Neive facing south-west, where
the Nebbiolo bunches receive the sun’s rays until late in the evening. The soil
has a uniform structure and composition, generally compact, made up of clay
and limestone covered by a mantle of quartz sand and very fine silt. The
vineyard extends across the upper part of the hill, until it reaches the crest.

The grapes, harvested exclusively by hand, are taken to the cellar and quickly destemmed and then delicately pressed. Fermentation with maceration takes place at a controlled temperature and frequent pumping over allows the must to be enriched with all the polyphenolic compounds present in the skins.
