About
The Domaine Christian Moreau Père et Fils is settled in the heart of Chablis since 2001, near by the Grands Crus, in very functional and modern facilities: an entirely air-conditioned 1500 m2 place gathering all the vineyard equipment, fermenting room, bottling, labeling and wine storage. The Domaine also has an old 17th century vault in the center of Chablis, «la Grange aux Dîmes”. The logo representing the Statue of Saint Martin can be seen in front of the church facing our “Grange”.
Terroir
This vineyard is located on the right bnka of Chablis. With 0.5 ha – south-east exposure the soils are clay-limestone marls from Kimmeridgien (Upper Jurassic), mostly calcareous
Vinification
Manual harvesting and grape selection on a sorting table. Pneumatic press. Cold settling and fermentation with a temperature of around 20°C. Natural yeasts. 100% in barrels during 9 months (1 to 5 year-old barrels – no new oak) and 6 months blending in tanks before bottling. 100% of the malolactic fermentation. Natural tartaric stabilization after 12 to 16 months aging.
Tasting Notes
Known as the most « feminine » Grand Cru, this wine is dense and fruity, with a lot of finesse and elegance.
