Summary
Grapes are sourced from vineyards with soils rich in limestone and clay that border the Etang of Thau, and from schist-rich vineyards from the area around Saint Chinian.
"To elaborate our Rosé, we work with partners in cooperative cellars complying with the strictest code. After selecting the specific vineyards to farm at springtime, we decide on the time of harvest. We use mechanical harvesting to ensure that we quickly pick the berries at low temperature. With no pre-fermentation maceration, the grapes are directly pressed. Selected yeasted are used through alcoholic fermentation which takes two weeks, during which a temperature lower than 16° is maintained. In tank, stirring of the lees is done during the fall. During the aging period, we choose to retain a high dose of CO2 to avoid unnecessary racking or handling."-Gregory Hecht and François Bannier

"Deep Salmon color promises a full ros experience. Delightful aromatic nose of raspberry and orange slices with an overall energizing, minerally edge. Freshness and liveliness beg you to take a sip. Almost sparkling is the mouth sensation, while the high-toned cherry flavors are partnered with a long and lingering palate feel. More weight than many ross, it can be enjoyed with turkey and practically all dishes short of beef and lamb. This is about as vividly fresh-fruited, exuberant, vibrant, and capital-"M" mineral as you could ask for in any wine! I tried chasing some of Hecht & Bannier's new Maury with this and it was utterly luscious, almost suggestive of sweetness in its vivid evocation of red frui after having a fortified dessert wine in one's mouth! "Light on the nose with an almost syrupy sweetness of raspberry over lightly stony and stemmy tones. Understated on entry with a gentle elegance. This is soft and gossamer in the mouth, though its backed up with sweet strawberry fruit. Theres a touch of tropical fruit in the mouth, perhaps a bit of pineapple upside-down cake, even! This is rather seductive and easy to drink, though may be too subtle for all but the simplest food. Finishes with a sweet strawberry tone."
