Domaine Billaud-Simon Chablis 2015


The Billaud-Simon Chablis is source from throughout the Chablis appellation's finest communes. Grapes are pneumatically pressed at the domaine and macerated at cool temperatures for a period of 5 to 7 days. Alcoholic and malolactic fermentations, and ageing all occur in stainless steel vat. The wine is aged for 9 months prior to bottling.

Beautiful yellow color with pale green reflections. The nose is alluring with a distinctive Chablis style of vine peaches, banana, citrus and a touch of brioche. The palate is well-balanced between richness, freshness and elegance. The rich and supple texture lingers on the end palate. Intense ripe fruits blend with vanilla, mineral and vegetal notes and complement the wine’s soft structure.

The 2015 Chablis Villages, which comes from vines located just to the north of Fye, has a rather reduced bouquet that lacks the freshness and delineation of its peers. The palate is lively on the entry but then it is missing complexity and mineralite, with a rather conservative finish. Give this 12 months in bottle for that reduction to sort itself and don't be afraid for a short decant. Anticipated maturity: 2018-2022.

Here there is better Chablis character and even a hint of mineral reduction to the green apple, citrus and tidal pool-scented nose. There is impressive richness to the solidly intense medium-bodied flavors that offer good salinity on the equally clean and dry finale. This isn't an elegant wine but it's delicious and one that should also be accessible young.

Pale, green-tinged yellow. Very ripe aromas of pear, yellow peach, spices and dusty herbs, plus a hint of banana. Nicely concentrated and distinctly dry, finishing with a note of licorice and some alcoholic warmth. (I enjoyed the candied lemon and lime peel and high-toned ginger aromas of the just-bottled Petit Chablis but found it atypically big for its category and a touch aggressive and alcoholic.)
