To the south of the Côte de Beaune, Chassagne-Montrachet shares with Puligny-Montrachet the undisputed prince of all dry white wines of creation: the divine Montrachet (pronounced Mon-rachet). This large and beautiful hillside brings the two Burgundian grape varieties to excellence. Pinot noir and chardonnay flourish here side by side due to the complexity of the terroirs. Large quarries of marble stone form a rocky front: in Paris, the Trocadéro or more recently the Louvre Pyramid use this stone in pink or beige paving.

Terroir

Plot located in the northern part of the appellation, close to Puligny from which it takes its minerality. It comes from one of our own vineyards, planted in 1952 and a neighboring plot.

Vinification

The grapes are grown sustainably in calcareous-clay soil. 100% manual harvest. 100% Chardonnay. 100% whole grapes, 24h static settling. Alcoholic and malolactic fermentation in oak barrels. 18 months ( 6 months in stainless steel tank) 100% in oak barrels ( 20% of new oak)

Tasting Notes

This wine reveals mineral notes of flint and flint, with a nice tension on the palate. The texture offers a real chewy sensation. In the finish, accents of fresh almond complete the whole.

Food Pairing

Ideal with a filet mignon of veal or scallops with cream.
