Quite simply, producing Fine Wines. This short maxim represents a big promise for Olivier Leflaive. First, respecting the love of the terroir that has been handed down through the generations. Contributing to the reputation of the region and preserving the soul and personality of the wines through a plot-based approach. But it is also the promise of embodying values and always following our convictions. It is also, and above all, the promise of sparking dreams thanks to an emotional approach to the way the wines are experienced. Hence, from the vine to the glass, the family-run winery, authentic and ancestral, has become a guarantee of quality over the past 40 years.

Terroir

This cuvée is made from a blend of around twenty different plots from the Côte de Beaune, from Santenay to Pernand-Vergelesses.

Vinification

The grapes are grown sustainably in silty clay soil. 100% manual harvest. 100% Pinot Noir. 100% destemmed grapes. Alcoholic fermentation in open vats: 15/20 days. 16 months ( 5 months in stainless steel tank) 80% oak barrels (15% new oak)

Tasting Notes

Notes of black fruit and raspberry dominate, accompanied by a slightly tannic and structured palate.

Food Pairing

Ideal with parsley ham or a pâté en croute.
