In the heart of the Côte des Blancs, between Chassagne-Montrachet and Puligny-Montrachet, in the immediate surroundings of Montrachet, Saint-Aubin is a wine-growing village in the south of the Côte de Beaune. The appellation has been recognized since 1937.

Terroir

A steep, south-west-facing vineyard overlooking the hamlet of Gamay.

Vinification

The grapes are grown sustainably in calcareous clay soil. 100% manual harvest. 100% Chardonnay. 100% crushed grapes. 24h static settling. Alcoholic and malolactic fermentations in oak barrels. 12 months (3 months in stainless steel tank) 100% in oak barrels (20% new oak)

Tasting Notes

Champlots is always lean, even angular at times. An excellent canvas for Chardonnay’s iodine, limestone and citrus qualities.

Food Pairing

Ideal on eggs casserole with morels or even Steamed Dim Sum, cabbage and leek wok glazed with soy.
